You’ll love the explosion of flavor that happens when these veggies combine! LOVE! Roasting vegetables brings out either their sweetness or spicy warmth. In this mix you’ll have the sweetness of the sweet potato and the spicy flavors of the peppers combined with cilantro & lemon. YUM!
This recipe is simple and loaded with flavor!
Ingredients –
2 medium sweet potatoes, cut into 1-inch chunks
1 red & 1 yellow bell pepper, seeded and diced
2 jalapeno peppers, minced
3 cloves of garlic, minced
1 chopped red onion
juice from 1 lemon or lime
2 cans of low sodium black beans, rinsed and drained
1/2 cup chopped fresh cilantro
2 or 3 tablespoons Extra Virgin Olive Oil, just enough to coat veggies prior to roasting
Directions –
Preheat oven to 400 degrees. In a large bowl combine sweet potatoes, jalapenos, red peppers, garlic, and olive oil. Sprinkle with salt and pepper then toss to coat thoroughly. Spread out in a single layer onto a baking sheet. Roast, turning occasionally, until potatoes are tender inside for approximately 40 minutes. Remove from the oven and keep on pan until ready to mix with other ingredients.
Meanwhile combine red onion, lemon (or lime) juice, black beans, and cilantro into the large bowl.
Add sweet potato mixture. Toss to combine all those wonderful flavors.
Serve warm or at room temperature. You could also let it chill in the fridge for the next day.
